I love a good cold noodle dish. Made with simple and fresh ingredients, you just mix everything together with a spicy and tangy sauce, and you’re done. Quick and easy. I think this is the Chinese version of jjolymyeon (Korean spicy, sour, and chewy noodles).

The secret is the sauce.
This is a quick and easy sauce that’s spicy, sweet, and tangy. Some people might think this sounds weird, but NO, I promise you, it’s so so good.
We first mix some aromatics together, and then pour some heated oil for that extra sizzle (it also allows the aromatics to bloom). Then we add the rest of the sauce ingredients, and mix everything together. It should create a vibrant orangey red colour.
I love making a big batch of this sauce where I can keep it in the refrigerator so that I can put together this dish faster whenever I feel lazy.

You can use any noodle of your choice, but I personally like using Miki noodles, they’re these fresh thick egg noodles that’s popular in the Philippines. I love their chewy texture and they’re great in soup noodles, or for stir-frying. I got it at my local Asian grocery store.

Spicy, Sour & Chewy Noodles

Aromatics Mixture
- 1 scallion (finely chopped)
- 4 garlic cloves (minced)
- 2 tsp sesame seeds
- 1 tbsp crushed peanuts
- 1 tbsp Chinese chili flakes
- 2 tbsp heated neutral oil
Sauce Mixture
- 2 tbsp light soy sauce
- ½ tbsp dark soy sauce
- ½ tbsp vegetable oil
- 2 tbsp Chinese black vinegar
- 1 tbsp oyster sauce (for vegetarians, use vegetarian version)
- ½ tbsp sugar
- ½ tsp chicken powder (can sub with salt for vegetarian)
Assembling
- 2 servings noodles of choice (I like using Miki Noodles)
- Cucumber (julienned)
- Cilantro (finely chopped)
- Sauce from above
Instructions
Aromatics Mixture
- In a bowl, mix all the ingredients from the Aromatics Mixture except for the heated oil.
- Then heat up the oil and pour it into the aromatics mixture bowl. It should create a sizzle sound.
Assembling + Adding the Sauce
- In the same bowl from above, add all the sauce ingredients and mix everything together. It should create a vibrant orangey red sauce.
- Cook your noodle of choice. For Miki Noodles, I recommend dunking into iced water after cooking for a more chewy texture. Drain afterwards.
- Prepare each noodle serving in individual bowls.
- Add the cucumber, cilantro, and the sauce to each bowl.
- Mix everything like crazy. Serve and enjoy!
